Not a day goes by without observing the extent to which some decanting will improve a young wine. A bottle opened a few hours in advance will unfold its complexity with ease, and express its full fruit character. In fact, decanting replaces in young wines the maturation that older vintages gain in bottle.

This is why I recommend decanting 2-3 hours before serving every bottle of Anthonic under 5 years old.

I am often asked how many years one should wait before drinking our wines. Generally speaking, it is never wrong to drink them between 3 and 7 years old, even if the ageing potential is greater, as it is in the best vintages.

The fact is, everything is a matter of taste. The panoply of aromas which an aged wine will develop (complex and integrated flavours, notes of undergrowth, prune, leather, etc) are not the same as those of a young wine (bursting with fruit, with a beguiling oak character, and displaying an exuberance of flavours and youthful tannins).

Each and every one of us have different tastes and we must consequently work out our own! We invite you to ask us for our comments on its evolution, whatever the vintage you may have.
